Stuffed Mashed Potato Rings with Ground Beef and Cheese
Ingredients:
For the mashed potato base:
- 5 medium potatoes, peeled and boiled
- 2 tbsp butter
- 1/4 cup milk
- Salt and pepper, to taste
- Fresh dill, finely chopped
- 1 egg (optional, for binding)
For the filling:
- 300g (about 10 oz) ground beef
- 1 small onion, finely chopped
- 1/2 red bell pepper, chopped
- 1/2 green bell pepper, chopped
- 2 garlic cloves, minced
- 2 tbsp tomato paste or sauce
- Salt, pepper, and paprika, to taste
- Olive oil for cooking
Topping:
- Grated mozzarella or cheddar cheese
- Extra fresh dill for garnish
Instructions:
- Prepare Mashed Potatoes:
- Mash the boiled potatoes with butter, milk, salt, pepper, and chopped dill.
- Mix in the egg if using (helps hold the shape better).
- Shape Potato Rings:
- On a baking tray lined with parchment paper, form ring-shaped nests using the mashed potatoes. Leave a hollow center for the filling.
- Make the Beef Filling:
- In a pan, sauté onions and garlic in olive oil until soft.
- Add ground beef and cook until browned.
- Stir in the bell peppers, tomato paste, and spices. Cook for another 5–7 minutes until everything is well mixed and cooked.
- Assemble:
- Fill the potato nests with the beef mixture.
- Top each with grated cheese.
- Bake:
- Preheat oven to 200°C (392°F).
- Bake for 20–25 minutes or until the cheese is golden and bubbly.
- Serve:
- Garnish with fresh dill and serve hot!
