Stuffed Mashed Potato Rings with Ground Beef and Cheese

Ingredients:

For the mashed potato base:

  • 5 medium potatoes, peeled and boiled
  • 2 tbsp butter
  • 1/4 cup milk
  • Salt and pepper, to taste
  • Fresh dill, finely chopped
  • 1 egg (optional, for binding)

For the filling:

  • 300g (about 10 oz) ground beef
  • 1 small onion, finely chopped
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste or sauce
  • Salt, pepper, and paprika, to taste
  • Olive oil for cooking

Topping:

  • Grated mozzarella or cheddar cheese
  • Extra fresh dill for garnish

Instructions:

  1. Prepare Mashed Potatoes:
    • Mash the boiled potatoes with butter, milk, salt, pepper, and chopped dill.
    • Mix in the egg if using (helps hold the shape better).
  2. Shape Potato Rings:
    • On a baking tray lined with parchment paper, form ring-shaped nests using the mashed potatoes. Leave a hollow center for the filling.
  3. Make the Beef Filling:
    • In a pan, sauté onions and garlic in olive oil until soft.
    • Add ground beef and cook until browned.
    • Stir in the bell peppers, tomato paste, and spices. Cook for another 5–7 minutes until everything is well mixed and cooked.
  4. Assemble:
    • Fill the potato nests with the beef mixture.
    • Top each with grated cheese.
  5. Bake:
    • Preheat oven to 200°C (392°F).
    • Bake for 20–25 minutes or until the cheese is golden and bubbly.
  6. Serve:
    • Garnish with fresh dill and serve hot!
