Chicken with creamy lemon and garlic sauce

Creamy Lemon Garlic Chicken Thighs

Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 3–4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 teaspoon Dijon mustard (optional)
  • 1 tablespoon butter
  • Fresh parsley, chopped (for garnish)
  • Lemon slices (for garnish)

Instructions:

  1. Season the Chicken:
    • Pat chicken thighs dry with paper towels.
    • Season generously with salt and pepper on both sides.
  2. Sear the Chicken:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add the chicken thighs, skin side down, and sear for 4–5 minutes per side until golden brown. Remove and set aside.
  3. Make the Sauce:
    • In the same pan, reduce heat to medium and add butter and garlic. Sauté for 1 minute.
    • Pour in chicken broth and stir, scraping up any brown bits from the bottom.
    • Add heavy cream, lemon juice, lemon zest, and Dijon mustard. Stir well.
  4. Simmer the Chicken:
    • Return the chicken to the skillet.
    • Reduce heat to low, cover, and let it simmer for 20–25 minutes, or until the chicken is cooked through and tender.
  5. Garnish and Serve:
    • Top with chopped parsley and lemon slices.
    • Serve with rice, mashed potatoes, or crusty bread.
