Apple Pie Recipe | How to Make Lattice/Woven Pie Top

Ingredients:

Apple Filling:
  • 500 grams (4 cups) apples, peeled and sliced
  • 1/2 tablespoon (4 grams) cinnamon powder
  • 1/3 cup (80 grams) unsalted butter
  • 3/4 cup (150 grams) granulated sugar
  • 1/8 cup (16 grams) cornstarch or corn flour (use slightly more if substituting with all-purpose flour)
  • 1/4 cup (60 ml) water
Pie Crust:
  • 2 1/2 cups (315 grams) all-purpose flour
  • 1 cup (230 grams) unsalted butter, chilled and cubed
  • 1/2 teaspoon salt
  • 6-8 tablespoons (90-120 ml) ice water
  • 1 egg (for egg wash)

Instructions:

Step 1: Prepare the Pie Crust

  1. In a large bowl, mix flour and salt. Add chilled, cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tablespoon at a time, and mix until the dough just comes together. Do not overmix.
  3. Divide the dough into two equal portions, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Step 2: Make the Apple Filling

  1. In a saucepan, melt butter over medium heat. Add sugar and stir until dissolved.
  2. Add sliced apples and cinnamon, stirring occasionally for 3-5 minutes.
  3. In a small bowl, mix cornstarch with water until dissolved. Add to the apple mixture and cook until the filling thickens (about 2-3 minutes). Remove from heat and let it cool.

Step 3: Assemble the Pie

  1. Preheat oven to 375°F (190°C).
  2. Roll out one portion of dough on a floured surface to fit a 9-inch pie pan. Place it in the pan and trim excess dough.
  3. Pour the cooled apple filling into the crust.

Step 4: Create the Lattice Top

  1. Roll out the second portion of dough and cut it into 1/2-inch (1 cm) strips.
  2. Arrange half of the strips over the pie in one direction, then weave the remaining strips over and under to create a lattice pattern.
  3. Trim the edges and press them together with the bottom crust.

Step 5: Bake the Pie

  1. Beat the egg and brush it over the lattice top for a golden finish.
  2. Bake for 45-50 minutes or until the crust is golden brown.
  3. Let the pie cool for at least 30 minutes before serving.
