Apple Pie Recipe | How to Make Lattice/Woven Pie Top
Ingredients:
Apple Filling:
- 500 grams (4 cups) apples, peeled and sliced
- 1/2 tablespoon (4 grams) cinnamon powder
- 1/3 cup (80 grams) unsalted butter
- 3/4 cup (150 grams) granulated sugar
- 1/8 cup (16 grams) cornstarch or corn flour (use slightly more if substituting with all-purpose flour)
- 1/4 cup (60 ml) water
Pie Crust:
- 2 1/2 cups (315 grams) all-purpose flour
- 1 cup (230 grams) unsalted butter, chilled and cubed
- 1/2 teaspoon salt
- 6-8 tablespoons (90-120 ml) ice water
- 1 egg (for egg wash)
Instructions:
Step 1: Prepare the Pie Crust
- In a large bowl, mix flour and salt. Add chilled, cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
- Gradually add ice water, 1 tablespoon at a time, and mix until the dough just comes together. Do not overmix.
- Divide the dough into two equal portions, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
Step 2: Make the Apple Filling
- In a saucepan, melt butter over medium heat. Add sugar and stir until dissolved.
- Add sliced apples and cinnamon, stirring occasionally for 3-5 minutes.
- In a small bowl, mix cornstarch with water until dissolved. Add to the apple mixture and cook until the filling thickens (about 2-3 minutes). Remove from heat and let it cool.
Step 3: Assemble the Pie
- Preheat oven to 375°F (190°C).
- Roll out one portion of dough on a floured surface to fit a 9-inch pie pan. Place it in the pan and trim excess dough.
- Pour the cooled apple filling into the crust.
Step 4: Create the Lattice Top
- Roll out the second portion of dough and cut it into 1/2-inch (1 cm) strips.
- Arrange half of the strips over the pie in one direction, then weave the remaining strips over and under to create a lattice pattern.
- Trim the edges and press them together with the bottom crust.
Step 5: Bake the Pie
- Beat the egg and brush it over the lattice top for a golden finish.
- Bake for 45-50 minutes or until the crust is golden brown.
- Let the pie cool for at least 30 minutes before serving.
