200g fresh morel mushrooms (or dried morels soaked in warm water)

2 garlic cloves, minced

1 small onion, finely chopped

1 medium carrot, diced

4 cups vegetable or chicken broth

1 celery stalk, chopped

1/2 cup fresh cream (optional)

Salt and black pepper, to taste

Chopped parsley for garnish

If using dried morel mushrooms, soak them in warm water for 20 minutes, then drain and keep the soaking liquid.

Heat the olive oil in a pot over medium heat. Add the onion and garlic, and sauté until translucent.
