Crispy Spinach and Cheese Puff Pastry Pockets


Enjoy these crispy and golden spinach and cheese puff pastry pockets, filled with a creamy blend of ricotta, mozzarella, and parmesan. Perfect as a snack, appetizer, or light meal, they are easy to make and absolutely delicious!

Ingredients:

  • 1 sheet of puff pastry, thawed
  • 1 cup fresh spinach, chopped (or frozen spinach, thawed and drained)
  • 1 cup ricotta cheese
  • ½ cup mozzarella cheese, shredded
  • ¼ cup parmesan cheese, grated
  • 1 egg
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 egg yolk (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions:

  1. Preheat Oven: Set your oven to 375°F (190°C).
  2. Prepare Filling: In a bowl, mix spinach, ricotta, mozzarella, parmesan, egg, garlic powder, salt, and pepper until well combined.
  3. Prepare Puff Pastry: Roll out the puff pastry and cut it into rectangles.
  4. Assemble Pockets: Spoon a generous amount of the spinach and cheese mixture onto one half of each rectangle. Fold the pastry over and seal the edges with a fork.
  5. Egg Wash: Mix egg yolk with milk and brush over the top of the pastries for a golden finish.
  6. Bake: Place on a lined baking sheet and bake for 20-25 minutes or until golden brown.
  7. Serve: Let cool slightly and enjoy warm!
