Ingredients:
- 1 sheet of puff pastry, thawed
- 1 cup fresh spinach, chopped (or frozen spinach, thawed and drained)
- 1 cup ricotta cheese
- ½ cup mozzarella cheese, shredded
- ¼ cup parmesan cheese, grated
- 1 egg
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 egg yolk (for egg wash)
- 1 tablespoon milk (for egg wash)
Instructions:
- Preheat Oven: Set your oven to 375°F (190°C).
- Prepare Filling: In a bowl, mix spinach, ricotta, mozzarella, parmesan, egg, garlic powder, salt, and pepper until well combined.
- Prepare Puff Pastry: Roll out the puff pastry and cut it into rectangles.
- Assemble Pockets: Spoon a generous amount of the spinach and cheese mixture onto one half of each rectangle. Fold the pastry over and seal the edges with a fork.
- Egg Wash: Mix egg yolk with milk and brush over the top of the pastries for a golden finish.
