Crockpot Corned Beef and Cabbage
Ingredients:
- 3–4 lb corned beef brisket with spice packet
- 1 small head of cabbage, cut into wedges
- 6–8 small red or yellow potatoes
- 4 carrots, peeled and cut into chunks
- 1 onion, quartered
- 4 cups water or beef broth
- Salt and pepper, to taste
- Fresh parsley for garnish (optional)
Instructions:
- Place vegetables (potatoes, carrots, onion) in the bottom of the crockpot.
- Place the corned beef brisket on top of the vegetables. Sprinkle the spice packet over the meat.
- Add water or broth to cover the brisket about halfway.
- Cook on low for 8–10 hours or until the meat is tender.
- In the last 2 hours of cooking, add the cabbage wedges on top.
- When done, slice the brisket against the grain and serve with the vegetables.
- Garnish with chopped parsley if desired.
