Crockpot Corned Beef and Cabbage

Slow-cooked salt beef, melting in the mouth, with cabbage, potatoes, and carrots—the perfect blend of warm and comforting flavors.
Easily prepared in the slow cooker, this delicious dish makes a delicious meal any day of the week or for special occasions.


Crockpot Corned Beef and Cabbage

Ingredients:

  • 3–4 lb corned beef brisket with spice packet
  • 1 small head of cabbage, cut into wedges
  • 6–8 small red or yellow potatoes
  • 4 carrots, peeled and cut into chunks
  • 1 onion, quartered
  • 4 cups water or beef broth
  • Salt and pepper, to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Place vegetables (potatoes, carrots, onion) in the bottom of the crockpot.
  2. Place the corned beef brisket on top of the vegetables. Sprinkle the spice packet over the meat.
  3. Add water or broth to cover the brisket about halfway.
  4. Cook on low for 8–10 hours or until the meat is tender.
  5. In the last 2 hours of cooking, add the cabbage wedges on top.
  6. When done, slice the brisket against the grain and serve with the vegetables.
  7. Garnish with chopped parsley if desired.
