Ingredients:
3 medium carrots, sliced
2 large chicken breasts, cut into large pieces
1 cup peas
2 large potatoes, diced
1 onion, chopped
2 tbsp olive oil
3 garlic cloves, minced
1 cup tomato sauce
2 cups chicken broth
1 tsp paprika
1 tsp dried thyme
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Heat olive oil in a large pot over medium heat. Add the chicken pieces and sear until golden brown on both sides. Remove and set aside.
In the same pot, sauté onions and garlic until fragrant.
Add carrots, potatoes, thyme, paprika, salt, and pepper. Cook for about 5 minutes while stirring.
Pour in the chicken broth and tomato sauce, then stir well.
Return the chicken pieces to the pot. Cover and simmer on low heat for 25–30 minutes or until the chicken is cooked and the vegetables are tender.
Add peas during the last 5 minutes of cooking.
Garnish with fresh parsley and serve hot.
