Pickled Red Onions Recipe

Ingredients:

  • 2 large red onions, thinly sliced
  • 1 cup apple cider vinegar (or white vinegar)
  • 1 cup water
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 2 cloves garlic, peeled
  • 1 teaspoon dried oregano
  • Optional: a few sprigs of fresh thyme or rosemary

Instructions:

  1. Peel and thinly slice the red onions into rings.
  2. In a small saucepan, combine vinegar, water, sugar, and salt. Heat over medium heat and stir until the sugar and salt dissolve. Remove from heat.
  3. Place the sliced onions, garlic cloves, and oregano into a clean glass jar.
  4. Pour the warm pickling liquid over the onions until they are fully submerged.
  5. Let the jar cool at room temperature, then cover it with a lid and refrigerate.
  6. Allow the onions to pickle for at least 1 hour before using. For best flavor, wait 24 hours.

Storage:
Keep the pickled onions refrigerated. They will stay fresh for up to 2-3 weeks.
