Steamed Spongy Caramel Custard

Steamed Caramel Custard:

Ingredients:

  • For the caramel:
    • ½ cup (100g) sugar
    • 2 tbsp water
  • For the custard:
    • 4 eggs
    • 1 cup (240ml) milk
    • ½ cup (100g) sugar
    • 1 tsp vanilla extract

Instructions:

  1. Prepare the Caramel:
    • In a small saucepan, heat the sugar and water over medium heat until it turns golden brown.
    • Pour the caramel into a rectangular or square mold and spread evenly. Set aside.
  2. Prepare the Custard:
    • In a bowl, whisk eggs and sugar until well combined.
    • Heat the milk until warm (not boiling), then gradually mix it into the egg mixture.
    • Add vanilla extract and stir well.
    • Strain the mixture to remove any lumps for a smooth texture.
  3. Steam the Custard:
    • Pour the custard mixture over the caramel in the mold.
    • Cover with foil to prevent water droplets from falling in.
    • Steam for about 30-40 minutes over medium-low heat until set.
    • Check by inserting a toothpick—if it comes out clean, it’s done.
  4. Cool & Serve:
    • Let it cool to room temperature, then refrigerate for at least 2 hours.
    • To serve, gently loosen the edges with a knife and invert onto a plate.
