Steamed Caramel Custard:
Ingredients:
- For the caramel:
- ½ cup (100g) sugar
- 2 tbsp water
- For the custard:
- 4 eggs
- 1 cup (240ml) milk
- ½ cup (100g) sugar
- 1 tsp vanilla extract
Instructions:
- Prepare the Caramel:
- In a small saucepan, heat the sugar and water over medium heat until it turns golden brown.
- Pour the caramel into a rectangular or square mold and spread evenly. Set aside.
- Prepare the Custard:
- In a bowl, whisk eggs and sugar until well combined.
- Heat the milk until warm (not boiling), then gradually mix it into the egg mixture.
- Add vanilla extract and stir well.
- Strain the mixture to remove any lumps for a smooth texture.
- Steam the Custard:
- Pour the custard mixture over the caramel in the mold.
- Cover with foil to prevent water droplets from falling in.
- Steam for about 30-40 minutes over medium-low heat until set.
- Check by inserting a toothpick—if it comes out clean, it’s done.
- Cool & Serve:
- Let it cool to room temperature, then refrigerate for at least 2 hours.
- To serve, gently loosen the edges with a knife and invert onto a plate.
