Tomato Salad with Garlic, Olive Oil, and Fresh Herbs

★Ingredients

2-3 cloves garlic, finely minced

4 large ripe tomatoes, sliced or halved

1 tablespoon fresh parsley or basil, finely chopped

3 tablespoons extra virgin olive oil

½ teaspoon freshly ground black pepper

1 teaspoon sea salt (to taste)

Optional: a splash of balsamic vinegar

★Instructions

  • Wash the tomatoes thoroughly and cut them into halves or slices. Place them in a serving bowl or plate.
  • Drizzle the tomatoes with extra virgin olive oil.
  • Sprinkle the minced garlic evenly over the tomatoes.
  • Add the freshly chopped parsley or basil.
  • Season with sea salt and freshly ground black pepper to taste.
  • Optional: Add a splash of balsamic vinegar for a slightly tangy flavor.
  • Toss gently to combine all the flavors or leave as is for a beautiful presentation.
  • Serve fresh as a light appetizer or side dish.
